Welcome to a new way of looking at the Indian kitchen. Most cookbooks give you a static list of ingredients for a single dish, but growing up watching my mom, I realized she wasn't following a page—she was following a system.
On this site, I’m moving away from the traditional "one page per recipe" format. Instead, I’m sharing what I call the Indian Curry Algorithm. This is the "source code" behind the flavors you love, broken down into a logical, modular flow that allows you to master one method and unlock infinite possibilities.
Instead of memorizing fifty different recipes, you only need to understand five core steps. By mastering the Most Common Indian Base Gravy, you can pivot from a Butter Chicken to a Lamb Korma simply by changing your "Balance" and "Final Flavors."
Every great curry starts here. We build layers of flavor using:
Fat: Ghee or oils to carry the spices.
Whole Spices: Toasted to release their essential oils.
The Allium & Holy Trinity: Sautéing onions, garlic, and ginger until the raw smell vanishes and the onions turn translucent and brown.
The Acid & The Nut: Deglazing with tomatoes and adding nuts (like cashews) for a rich, velvety texture once blended.
This is where you define the dish. Whether you use a freshly ground mix of coriander, cumin, and cardamom or a high-quality ready-to-use blend, this step adds the specific character to your gravy.
Whether it’s marinated chicken thighs for Butter Chicken, pressure-cooked lamb for Korma, or fresh seafood, the algorithm adjusts to your choice of protein or vegetables.
The final steps bring harmony. We balance the heat with coconut milk or full-fat cream and finish with a "temper" of hot oil, curry leaves, or a drizzle of butter and fresh coriander.
Efficiency: Master the base once, and you can cook five different curries in a single week without starting from scratch.
